Various Salad Dressings
To make the French vinaigrette, mix together the mustard, white wine vinegar, oil, soy sauce and herbs. Add the shallot and sugar and stir. French vinaigrette is perfect for leafy salads, tomato salads and cucumber salads.
For the honey dressing, mix together the vinegar, oil, soy sauce, honey and chives and season with pepper.
To make the Italian dressing, stir together the olive oil and balsamic vinegar, soy sauce and Italian herbs, then season with sugar and pepper. Italian dressing harmonises very well with tomato and mozzarella salad, antipasti and crispy salads.
To make the lemon dressing, bring the water, starch, soy sauce, vinegar and sugar to the boil, stirring continuously. Then add 1 tbsp. lemon juice and 2 tbsp. spring onions. Leave to cool. Ready.
To make the sour cream & lime dressing, mix together the crème fraîche with the cream, lime juice, soy sauce, sugar and lemon balm. Season with pepper. Sour cream & lime dressing tastes delicious with mixed salads, and also with cooked vegetable salads.

For the French vinaigrette:
- > 1 small shallot, peeled and finely chopped
- > 3 tbsp. Dijonsenf
- > 8 tbsp. white wine vinegar
- > 120 ml cooking oil
- > 2 tsp. Provencial herbs
- > 1 pinch of sugar
For the honey dressing:
- > 6 tbsp. vinegar
- > 6 tbsp. cooking oil
- > 4 tbsp. Kikkoman soy sauce
- > 4 tbsp. honey
- > 1-2 tbsp. chives
For the Italian dressing:
- > 150 ml olive oil
- > 8 tbsp. balsamic vinegar
- > 2 tbsp. Kikkoman soy sauce
- > 2 tbsp. Italian herbs
- > A pinch of sugar
- > pepper
For the lemon dressing:
- > 50 ml water
- > 1/2 tsp. starch
- > 20 ml Kikkoman soy sauce
- > 20 ml rice vinegar
- > 10 g sugar
- > 1 tsp. lemon juice
- > 2 tbsp. spring onions
For the sour cream & lime dressing:
- > 1/2 pot of crème fraîche
- > 80 g sour cream (30% fat)
- > 2 tbsp. lime juice
- > 1 tbsp. Kikkoman soy sauce
- > 1 pinch of sugar
- > 1-2 tbsp. chopped lemon balm
