Salmon with Soy Sauce

Wash the salmon fillets and pat them dry. Mix together the soy sauce, oil, lemon juice and rind. Peel and dice the ginger and add it to the mixture. Put the salmon fillets in the marinade and leave for at least 30 minutes, turning several times. Remove the salmon from the marinade and grill it or cook it in a non-stick frying pan. You can also put a little marinade in the pan and reduce it slightly. To intensify the flavour of the salmon during the grilling or frying process, brush each side several times with the marinade.
