Salmon in Lemongrass-ginger Marinade with Coriander Salsa
Mix together Kikkoman soy sauce, lemon grass, sambal oelek chilli pepper sauce, ginger and coriander stalks, pour the marinade over the salmon and let it marinate for at least 30 minutes in the fridge. Place the salmon on a baking sheet, drizzle with honey and bake it for around 12 minutes at 210°C.
For the salsa, chop the chillies, finely chop the spring onions and mix with coriander leaves. Drizzle the salmon with salsa and serve with rice or noodles.
Ingredients for 2 portions:
- > 2 salmon steaks/fillets, around 200 g
- > 3 tbsp. Kikkoman soy sauce
- > 1 stalk finely-chopped lemon grass or 1 tsp. grated lemon peel
- > 1/4 tsp. sambal oelek chilli pepper sauce
- > 1 tsp. ground ginger
- > 1/2 tbsp. bruised coriander stalks
- > 1 tbsp. honey
For the coriander salsa:
- > 1-2 red chilli, de-seeded
- > 2-3 spring onions
- > small handful fresh coriander leaves
To serve:
- > rice or noodles
