The easy way to recognise best soy sauce
It's just as important to choose the right soy sauce as it is to use fresh ingredients if you want to produce the very best results in the kitchen. There are all kinds of soy sauces to choose from! If it's quality and purity you're looking for, choose a soy sauce with just a few, pure ingredients that has been manufactured in a natural process. This natural process is what enables the sauce's fine aromas to optimally develop.
There are so many brands of soy sauce on the supermarket shelves that it is difficult to know at first glance which ones offer the best quality. There a few simple tricks that you can learn to assess soy sauce quality:
> Take a look at the label on the back of the bottle
A good quality soy sauce, like this Kikkoman sauce, only lists a few natural ingredients such as water, soybeans, wheat and salt.
> The label also tells you whether the soy sauce is really just made of natural ingredients.
This is true if it states "No artificial colourings or flavourings". If the soy sauce contains added colours or flavourings, the manufacturer has to state this on the label together with the ingredients.
> The endorsement "naturally brewed" on the label also indicates that the soy sauce is of good quality.
Be careful, though, because soy sauces which have only been briefly brewed can also carry the endorsement "naturally brewed". You can only be sure that the sauce is genuinely naturally brewed and contains only pure ingredients if there are no additives listed in the ingredients.
> Let some of the soy sauce run into the bottle neck and back again.
If it is reddish-brown and slightly transparent, you can assume that you've made a good choice. Obviously, though, you still have to check the ingredients and make sure it has the "naturally brewed" endorsement.
> Shake the soy sauce gently.
A sauce with a thin consistency is a good sign. High quality soy sauce always has a light, thin consistency.
