Pan-fried beef with Broccoli
Dab the beef dry and cut into thin slices. Mix 2 tbsp. cornflour and 3 tbsp. soy sauce with the sugar and ginger. Peel the garlic and onion, crush the garlic and dice the onion. Add the garlic to the cornflour and soy sauce mixture and leave the beef to marinate in it for at least 15 minutes. In the meantime, clean the broccoli, remove the florets and halve them. Peel the stems and cut into small, narrow strips. Mix together the remaining 2 tbsp. starch and 3 tbsp. soy sauce with 350 ml water. Heat up 1 tbsp. oil in a large frying pan or wok. Add the meat, fry for approx. 1 minute at high heat, stirring continuously, then remove from the pan. Heat up the remaining oil in the same pan or wok. Add the broccoli stems, the broccoli florets and the onion and fry, stirring continuously, until the vegetables are 'al dente'. Add the meat and the soy sauce/cornflour mix and bring to the boil. Simmer until the sauce thickens. Serve with immediately with hot rice.
