Variations on the tiny delicacies
Japan is famous for its light and healthy cuisine. Probably the best example of typical Japanese cuisine is sushi - decorative rice snacks that come in many different shapes and forms. These little Japanese delicacies always contain rice that has been dressed with vinegar and sugar after cooking. They are topped or filled with fresh ingredients such as crispy vegetables, mushrooms, light omelette strips, fish and seafood. Many kinds of sushi are wrapped in parchment thin sheets of nori. This dried, roasted seaweed gives the sushi a very special flavour. There are no limits on creativity when it comes to making sushi.
> Nigiri sushi
To make this kind of sushi, the sushi rice is shaped by hand. The most important toppings for nigiri sushi are fish and shellfish. Its quality depends on the topping used, the freshness of the ingredients and the sushi chef's rolling skills.
> Maki sushi
Rice snacks rolled up in nori are called maki sushi. The rice snacks are wrapped up in roasted seaweed leaves (nori), which are rich in minerals and vitamins. A differentiation is made between maki of different sizes and shapes. Tekka maki are sushi rolls with tuna, kappa maki contain cucumber sticks and kampyo maki are filled with seasoned pumpkin sticks.
> Temaki sushi
Temaki sushi is very easy to make and eat. These hand rolled, conical sushis are perfect for parties, buffets and as finger food. They can be filled with vegetables (e.g. avocado, lettuce or cucumber), fresh fish (e.g. salmon or prawns) and Japanese mayonnaise.
> Inside-out rolls
Inside-out rolls, which are also called ura-maki sushi or California rolls, are a popular variation on sushi. They are called 'inside-out' sushi rolls because the rice is on the outside and the nori on the inside.
