Buying fresh fish

The fish that you cook should always be fresh. Kikkoman has compiled a list of tips and tricks that will help you to recognise a fresh fish so that you know what to look out for when you're shopping in the fish market:

- Fresh fish should always be well chilled and kept on ice.

- Do the smell test: fresh fish doesn't smell 'fishy', it smells of sea and salt water.

- The eyes of a fresh fish are shiny and clear, not cloudy or milky.

- Fresh fish has metallic, shiny scales that are firmly attached; if the scales come off easily, the fish isn't fresh.

- The skin is taut and firmly attached to the meat.

- Fresh fish meat is elastic, shiny and slices well.
