Kikkoman's ABC of Fish

Sear bream
This is a Mediterranean fish. It has very few bones, firm white flesh and tastes delicious. Although sea bream is available all year round, it tastes best between July and October.

Cod
Codfish is wonderfully tasty, snow white and has a firm consistency. The tail and back fillets are especially popular. The air-cured variety is called stockfish.

Trout
The trout is a freshwater fish that lives in streams and rivers. It is a member of the salmon family. Rainbow trout is a very popular variety that is often bred in trout farms. Trout meat is tender, full-flavoured and the bones are easy to remove. The flavour of the fish can differ depending on the quality of the water and its living environment.

Carp
Carps originally came from Asia. Today, the carp is one of the most successfully bred fish and can be found in many freshwater lakes. The meat is lean and tastes very good. The fish should always be left for a few days in clear water before it is slaughtered though.

Salmon
The Atlantic salmon lives in the North Atlantic and its river estuaries. The Pacific salmon lives exclusively in the North Pacific and its tributaries. Salmon is very popular and has a distinctive strong flavour. Salmon meat is tender and considered to be a delicatessen food.

Redfish
Redfish has a distinctive fiery red colour. It is caught all year round, mainly on the Icelandic and Norwegian coasts. Its firm, pink and tender meat is delicate in flavour and has a savoury aroma. It is very low in fat.

Plaice
The plaice is one of the most famous edible fishes in the world and it is very popular because of its white and very tasty meat. Plaice meat is firm and has a very distinctive flavour.

Monkfish
This fish lives in the Atlantic and the Mediterranean and has a very unusual physique. Two thirds of this fish consists of its head. Its fine, firm, snow white and low fat meat has no bones, so monkfish is definitely a gourmet fish.

Dover sole
This fish is a member of the flatfish family and it is one of the most coveted and exclusive fish on any restaurant menu. It is caught in the North Sea, often on tidal flats. The Dover sole has firm, white meat and tastes best if it is steamed or fried.

Tuna
This variety of fish can be found in all the world's oceans. It mainly lives in the North Sea, the western Baltic and the North Atlantic. It can also be found in the Pacific, in Chinese and Japanese waters and in America's coastal waters. Tuna is a very popular fish with a mild and salty flavour similar to veal. It is one of the tastiest kinds of fish and has only a few bones.

Sea bass
The sea bass, which lives in the seas to the south of the British Isles, is an exclusive fish with an elegant, silvery body. The white meat is lean and firm, and the sea bass is a genuine gourmet fish.

Pike perch
The pike perch is a member of the perch family and it is frequently found in Western Europe, Eastern Europe and in the USA. It has white, delicate yet firm meat, practically no bones, is very lean and mild in flavour.
